Originally from Brazil, Caroline Martins spent her early twenties immersed in the study of plasma physics. Despite a promising academic path, she made the bold decision to leave science behind to pursue her true passion: becoming a professional chef.

Caroline's culinary journey began when she moved to the UK to earn her diplôme de cuisine at the prestigious Le Cordon Bleu in London.

Following her training, she honed her skills in some of the world's most acclaimed kitchens, including Kitchen Table at Bubbledogs, Hotel Castel, Galvin La Chapelle, and Pied à Terre.

In 2022, Caroline launched her first pop-up residency, SAO PAULO, in Manchester’s vibrant Ancoats district. Her ever-evolving tasting menus combined the best of local British produce with authentic Brazilian flavours, creating a unique and exciting Brazilian-British fusion.​​

In 2022 and 2023, Caroline proudly represented Manchester on the BBC’S GREAT BRITISH MENU, bringing her vibrant cuisine to a national audience.

Named after the affectionate nickname Brazilians use for her hometown, São Paulo — SAMPA opened its doors in January/2025, and we've been honoured to be recognised as one of the 'LEADING RESTAURANTS' in the city by the prestigious This is Manchester Awards.
